Surly Brewing Company sold its first keg of beer in February of 2006. Since that time, we have added a canning line, more than doubled the size of the brewery, and almost tripled our work force (from 2 to 5 employees). But we still can’t make enough beer to keep everybody happy. From day one, the focus at the brewery has been on making the best beer we know how. That means using the best ingredients we can get our hands on, and lots of them. It means letting the beer age for longer periods of time. It means not filtering our beer to keep the flavor in the beer. It means committing to brewing cask beer, high-gravity beers, and beer-fest only beers. It means not compromising. With that in mind, we’ll probably never be able to brew enough for everybody, but that’s not the point.
